Spicy Cheese & Beans on Toast

Toast It — Revisited - Episode 8

Ingredients:

Serves one hungry person or two not-so-hungry people

1/2 tbsp olive oil
1 shallot
1 minced garlic
1/2 can chopped tomatoes
1/2 tsp smoked paprika
1 tbsp red wine vinegar
1 tbsp Chipotle paste
1 can cannellini beans
1/2 tsp sugar
Beef stock/2 oxo cubes
2 slices granary sourdough
1/2 cup grated Spicy or Mexican Cheese
1/2 tsp sea salt flakes
1 tbsp butter
1 tbsp chilli jam (optional)

Method:

Heat the oil in a small pan, add the shallot and garlic, and fry gently until soft. Add the tomato puree to the pan, along with the cannellini beans, chopped tomatoes, paprika, vinegar, beef stock, salt, sugar and chipotle paste. Bring to a simmer and cook for 10-15 mins or until slightly reduced and thickened
Toast the bread, butter it, then top with beans and spicy cheese. Put under the grill until the cheese bubbles and is slightly crispy.
I had mine with some chilli jam to add some sweetness and a little more spice
