Ingredients:
50g beef dripping
1 onion, finely diced
400g beef mince
5 garlic cloves minced
1 tbsp tomato purée
300ml red wine
300ml good-quality beef stock
1 tbsp thyme leaves
2 small slices of sourdough
1 tsp white wine vinegar
1 tbsp dijon mustard
60g mature cheddar
Salt and pepper
Method:
Put the beef dripping in a frying pan over a medium heat
Cook the onions over a low heat for 10 mins
Add the garlic and cook for a minute, then
Add the beef, season and fry 10 mins, stirring occasionally
Add the tomato puree and cook for another minute
Add the wine, increasing to a high heat and reducing until there is almost no liquid left
Add the stock, mustard, vinegar and thyme, bring to the boil and simmer for 15 minutes
Toast the sourdough, butter it, and serve with the mince and plenty of cheddar cheese
Enjoy!
