Parmesan Scrambled Egg topped with Crispy Prosciutto

Toast It Revisited - Episode 2

Ingredients:

- 2 slices of sourdough
- 4 pieces of prosciutto
- 3 eggs
- 50g Parmesan
- 50g butter
- Black pepper
- Chives to garnish

Method

- Fry your prosciutto for a minute on both sides, then put to one side
- Put your sourdough in the toaster
- In a pan on a low heat, melt half the butter, then whisk your eggs and add to the pan, remembering always to keep stirring
- The key to good scrambled eggs is low and slow
- Add 2/3’s of Parmesan and a touch of pepper and keep stirring until you get a loose curdle like in the video - should take about 4 - 5 mins
- Butter your toast and top with the scrambled eggs, prosciutto, parmesan and chives
- Enjoy
