Soft Boiled Eggs with Pesto and Avocado on Toast

Ingredients:

4 eggs
1 avocado
2 slices of sourdough
Salt & Pepper

Pesto:
1 cup Basil
1/2 cup Parmesan
1/4 cup Olive Oil
2 cloves garlic
1/2 Lemon - Juice

Method:

Boiled your eggs for 6 minutes, then add them to ice water to stop the cooking process
Put your Pesto ingredients into a blender and blend until smooth
Lightly cover your slices of bread with olive oil and toast in a pan
Peel your avocado
Remove your eggs from their shells and slice
Mash your avocado on to your toast, then add your eggs, cover with pesto, parmesan and season
Enjoy!
